6 eggs

6 ham slices, (roughly ¾-ounce per slice) cooked, at room temperature

1½ cups cheddar cheese, grated and divided

3 tbsp parsley, or green onions, or chives, chopped

3¾ tbsp unsalted butter, divided

salt and ground black pepper, to season

To serve:

1 tbsp sriracha, or hot sauce of choice

⅛ tsp cilantro, or parsley, chopped

In a medium-sized bowl, add egg, and parsley. Season with salt and pepper, whisk to combine. Melt 1¼ tablespoons of butter in a skillet over medium-low heat.

Pour roughly ⅓ of the egg mixture onto the skillet and swirl the skillet until it forms a thin layer covering the entire surface.

Heat for no more than 2 minutes until it firms up, then sprinkle ½ cup of cheese.

Cover, then allow to “steam” for roughly 1 minute until cheese has melted.

Working quickly while still warm, place the eggs onto the working area with parchment paper then add 2 ham slices per egg.

Roll tightly using the parchment paper as leverage and repeat until eggs and ham are used up.

Serve with hot sauce of choice and garnish with cilantro or parsley.
