Ingredients

1 lb honeysuckle white turkey breast

8 oz nuefchatel cheese

¼ cup onion, minced

3 tbsp chives, chopped

⅛ tsp garlic powder

2 tbsp fat free mayonaise

1 loaf pumpernickel cocktail bread, party loaf 12 oz. roasted peppers, drained (1 jar)

small green olives , optional, to taste

Preparation

Blend the first 5 ingredients together.

Spread 2 slices of the cocktail bread with a thin layer of the cheese mixture.

Cut the roasted peppers into 1-1/2 inch squares and place one between the bread slices along with a slice of turkey.

Cut diagonally and stack the two halves.

Top with an olive if desired, and secure with a decorative toothpick.

Repeat the process.
