But this is also great for using up tomatoes just about past their prime.Sugar – I used golden caster sugar to sweeten the tomato ketchup but you can use bronw sugar or white sugar too.Vinegar – Adds sharpness. Although I prefer red wine vinegar, you can use apple cider vinegar too.Ginger – Adds a little hint of spice. I used fresh ginger but feel free to use store bought puree ginger.Garlic – use fresh minced garlic, store bought minced garlic or garlic powder.Spices – this gets it flavour form the simple combination of ground cinnamon, smoked paprika, allspice, ground coriander and cloves. Vary the amount you put in to your taste.Salt – Use your favorite sea salt to complete this.

Mix together all the ingredients into a heavy bottomed saucepan over medium heat, bring to the boil and reduce to a dimmer for 30 minutes.Switch off the heat, let cool for a few minutes and puree using a immersion blender or table top blender.Strain ketchup, to remove the seeds.Returned sieved ketchup back into the sauce pan and simmer for another 30 minutes or until thickened to your taste.Let cool, decant and serve or store till needed.

Please do blend the ketchup up carefully, so that you don’t get splattered with hot liquid.If doing a large amount and using a blender, then blend carefully in batches.Add heat – toss in some red pepper flakes or chipotle for some heat.Vary spices – add onion powder, cumin or curry powder for extra flavors.
