½ cup unsalted butter, at room temperature

½ cup granulated white sugar

½ cup light brown sugar

2 eggs

1 cup honey

1 tsp vanilla extract

1 cup sour cream

6 cups all purpose flour

1½ tsp baking soda

½ tsp baking powder

½ tsp salt

1½ tsp ground cinnamon

1 tsp ground nutmeg

½ tsp ground ginger

In a large bowl using an electric mixer, beat butter, white sugar and brown sugar until creamy.

Add the eggs one at a time, creaming after each addition.

Add honey and sour cream.

In a large bowl, sift together all dry ingredients until well blended.

Pour wet ingredients over flour mixture and fold in with dry ingredients until all flour is moistened and the dough comes together.

Chill for at least 1 hour.

Preheat oven to 350 degrees F. Meanwhile, grease and line a baking tray or cookie sheet with parchment paper.

Using a rolling pin, roll dough on the lightly floured surface to about ¼ to ⅓-inch thick. Use cookie cutters to cut out your favorite shapes. Alternatively, you can also scoop out uniform-sized cookie dough balls into the baking sheet using an ice cream scoop.

Bake cookies for 8 to 10 minutes or until the edges are a light brown.
