2 lb ground beef, brisket

1¼ lb bacon strips, (roughly 20 pieces), thawed

salt and ground black pepper, to taste

cooking spray

For Assembly:

4 hamburger buns, sliced

8 tbsp cheddar cheese, grated

1 oz red onions, or yellow onions, sliced

1 oz tomato, sliced

1 oz mixed lettuce

1 tbsp condiment, of your choice, or ketchup, mayonnaise, relish, and/or mustard

For Serving:

1 cup potato fries, or potato chips, per serving

Roast your bacon first. Prepare a baking sheet and line it with parchment paper. Preheat your oven to 350 degrees F. Arrange your bacon strips evenly without overlapping on the lined baking sheet.

Roast until bacon is crispy, roughly 20 minutes. Drain excess oil as necessary and set it aside.

Prepare your burger patties. Season your ground brisket with salt and pepper, then mix to combine.

Divide your ground brisket into 4 equal portions, using either your hands or a mold of your choice.

Preheat your grill or griddle to high heat. Grease with cooking spray.

Sear your patties until fully cooked and grill marks are present on both sides, roughly 5 minutes per side.

Top with roughly 2 tablespoons of cheese on each patty. Continue grilling until cheese has melted, another 3 minutes.

Toast your buns, then assemble your sandwich. Spread roughly 1 tablespoon of your chosen condiment on each sliced bun, then place roughly ¼ ounce each of onion, lettuce, and tomatoes.

Place your patty on it, followed by 3 bacon strips per sandwich, breaking these up as necessary.

Cover with the top bun and place a skewer as needed to hold the sandwich in place. Serve with potato chips or fries.
