4 medium zucchinis, washed and halved lengthwise

1 tbsp olive oil

¼ cup Parmesan cheese, powdered or grated

¼ cup Cheddar cheese, shredded

¼ cup Monterey Jack cheese, shredded

1 tsp garlic powder

1 tsp onion powder

4 tomatoes, evenly-sized, cut into thick rings

salt & ground black pepper , to taste

Preheat your oven to 375 degrees F and line a baking sheet with parchment paper.

Place zucchini halves on sheet, cut side up, and brush with olive oil.

Arrange the tomato rings neatly on top of the zucchinis.

Sprinkle with garlic & onion powders. Season with salt & pepper. Top evenly with both cheeses.

Bake for about 10 minutes or until cheese begins to brown & tomatoes start blistering.

Remove from oven and let stand for 10 minutes before serving.

Garnish with parsley.
