Ingredients
4 oz boneless skinless chicken breast
¼ cup onion, sliced
½ cup green pepper, sliced
3 cup dark leafy greens, washed and torn into bite-size pieces
2 tbsp salsa
½ tbsp reduced-sodium soy sauce , or lemon juice
1 dash garlic powder
1 tbsp fat-free sour cream, optional
Preparation
Preheat non-stick skillet over medium heat.
Sauté chicken in lemon juice or soy sauce can use leftover chicken breast until heated through.
Increase heat to medium-high to high heat and add onions, peppers, and garlic powder.
Allow vegetables to char slightly.
Serve over bed of lettuce and top with salsa and fat-free sour cream.
