Ingredients
½ cup strawberries , or cantaloupe balls, sliced
1 pkg. strawberry flavor sugar free low calorie gelatin, or orange flavor
1 cup whipped topping, thawed, light
¾ cup water, boiling
½ cup water, cold
¾ cup ice cubes
6 tbsp. whipped topping, thawed , divided, light
Preparation
Divide strawberries among 6 dessert glasses.
Stir dry gelatin mix into boiling water in a medium bowl until completely dissolved.
Add cold water and ice cubes; stir until ice is completely melted.
Remove ¾ cup of the gelatin. Pour mixture evenly over strawberries.
Refrigerate 20 minutes or until gelatin is set but not firm.
Add 1 cup of whipped topping to remaining gelatin; stir with wire whisk until well blended.
Spoon evenly over gelatin.
Refrigerate 1 hour or until firm.
Top each parfait with 1 tbsp. of the remaining whipped topping just before serving.
Store leftover parfaits in refrigerator.
