Ingredients

1 cup unsweetened cocoa powder

1 ½ cup cake flour, sifted

2 large egg whites, slightly beaten

½ cup fat free plain yogurt

½ cup prune puree

1 ½ cup granulated sugar

½ tsp baking soda

½ tsp instant coffee

¼ cup vegetable oil

½ tsp salt

Preparation

Preheat oven to 350 degrees Fahrenheit.

Line baking sheets with parchment paper or spray with cooking spray.

Whisk together sugar, prune puree, yogurt, oil and egg whites.

In a separate bowl stir together flour, cocoa, salt, soda and coffee.

Blend the dry ingredients into the wet ones.

Drop by spoonfuls onto the baking sheets.

Bake for 12-14 minutes.
