3 cups zucchini, shredded

2 tbsp olive oil

2 tbsp lemon juice

4 tbsp cilantro, fresh, chopped

8 oz cream cheese, softened

salt and ground black pepper, to taste

Combine all ingredients in a food processor and blend well.

Transfer into a bowl and cover, chill for at least 1 hour before serving.

Serve with crackers, bread rounds, or fresh vegetables.
