Prepare the iced coffee concentrate in your instant pot or make cold brew coffee concentrate. (This can be done up to a week in advance and makes enough to enjoy all week long.)Prepare the tapioca pearls in your Instant Pot. In a separate container, combine heavy cream and sugar. Combine coffee concentrate and water in another container.Divide the tapioca pearls between 2 glasses.Pour in the coffee mixture over the boba, then add the cream mixture, and serve.

Ice Coffee Concentrate can be stored for up to a week in the fridge. Boba is best when used within a few hours but can be stored in the cooking liquid or simple syrup in the fridge for a few days. Use BIG straws. You will need straws that are large enough for the boba to pass through.

Make Ahead And Storage

Store – Boba are best used within a few hours but will keep for several days in the fridge. Be sure to store them in the cooking liquid or simple syrup or they will harden. Your Iced Coffee Concentrate can be refrigerated in an airtight container for up to 1 week. Freeze – Freeze leftover iced coffee concentrate in ice cube trays to add to coffee drinks later on. To freeze boba follow these instructions.
