Add in some poultry seasoning if you prefer.Broth – this recipe calls for chicken broth but you can use vegetable broth instead.Dairy – The creaminess come from some heavy cream plus an optional amount of buttermilk for a little sharpness. Use half and half to cut calories.
How To Make Instant Pot Chicken and Dumplings

Add chicken broth, chicken thighs, celery, potato, onions, Italian seasoning, salt, pepper, and biscuit pieces into the Instant Pot.Close the Instant pot lid, seal, set to high pressure, select Pressure Cook or Manual Setting (depending on the Instant Pot model) and set timer for 7 minutes.Once done, allow for a natural pressure release of 5 minutes and then perform a quick release of the remaining pressure. Open the lid, remove the cooked chicken and cut into bite-sized pieces or shred, and set aside.Set to sauté setting on normal, stir in grated carrots and simmer for a minute, followed by heavy cream, and buttermilk. Add the chicken back in and simmer for a minute, then switch off the heat and serve.
Make Your Own Dumplings From Scratch

2 cups flour1 cup buttermilk1 teaspoon baking powder1 teaspoon herb and garlic seasoning (or you can sub Italian)2-3 tablespoons heavy cream
Mix the flour, baking powder and seasoning together. Then stir buttermilk. Mix into a batter but don’t over mix. Turn the dumpling dough onto a floured surface.You can cut dumplings with a pastry cutter or make rolled dumplings. If you find the dumpling dough to be too thick add in a tbsp at a time of the heavy cream. The mixture should be thick like a batter and not runny.
Recipe Tips
Make sure to add the dumplings individually into the sauce to avoid them clumping together. If they are stuck together then break them up with a wooden spoon before serving.If you prefer you can brown the raw chicken in a little olive oil before cooking.If you want less chicken broth when serving, just scoop some out and use it for something else.The broth will thicken up as this cools down. If you want it thicker, then sauté with a little cornstarch slurry.The total cook time does not include the time it takes for the Instant Pot to get to pressure. Plan for additional time.
From Scratch Dumpling Notes
From scratch dumplings will need a little longer to cook.Add a little flour if too wet or a teaspoon of water at a time if the flour mixture is too crumbly.Drop dumpling in small pieces so that they cook through.
Chicken N Dumplings Recipe Variations
Vary the seasoning – you can add in some garlic powder, dried oregano, poultry seasoning, etc.Frozen veggies – feel free to add in some frozen vegetables like frozen peas and frozen sweet corn. Add these in and simmer just before adding in the cream. Add heat – using red pepper flakes, chili powder, chipotle, etc.

Prep ahead – Cut the veggies and the chicken ahead of time and store.Store – Make ahead, cool and refrigerate in an airtight container for up to 3 days. This will thicken up over time, so you will need to add a splash of liquid as you reheat.Reheat – Reheat in a microwave. Or reheat in a saucepan over low to medium heat.
