Ingredients

3 oz graham crackers, (2½ packets)

½ cup sweetened condensed milk

lemon zests, (from 2 lemons)

⅔ cup lemon juice

⅔ cup powdered sugar

½ cup unsalted butter

½ cup heavy cream

1 tsp salt

2 cups cashew nuts, soaked overnight

Preparation

Layer crackers onto a 9x13-inch baking container.

Combine condensed milk, lemon juice, sugar, salt, butter, cream, and cashew nuts. Puree until smooth.

Layer mixture over graham crackers.

Lightly tap the baking container, removing any excess air bubbles.

Cover with plastic wrap, place in the fridge covered, and allow the mixture to firm up, preferably overnight.

Sprinkle your bars with lemon zest. Before serving, warm up a knife by running it on hot water and use it for slicing your bars. Portion accordingly and serve!
