How To Cook Lamb Roast
Preheat the oven to 220 C / 425 F / gas mark 7.In a small bowl, combine oil, orange juice, garlic, thyme, allspice, salt and pepper and mix into a paste. Place the lamb on a baking tray and rub with the paste, making sure all sides are thoroughly coated.Roast in preheated oven for 20 mins. Turn the temperature down to 160 C / 320 F, and continue to bake for an additional 16 mins per 500g (for medium), or 20 mins per 500g for lamb that is well done.Remove the roast boneless leg of lamb from oven and let it rest for a full 20 mins before slicing.Serve and enjoy!
