Ingredients
11⁄2 tbsp lemon zest
1⁄2 cup fresh lemon juice
1 cup sugar
3 eggs
1½ cup whipping cream
1 cup whole milk
1 tsp vanilla
1⁄8 tsp salt
Preparation
In a pan, mix together the zest, juice, sugar, and eggs.
Add in the whole milk and vanilla.
Cook the mixture over medium heat, stirring constantly until it comes to a simmer.
Strain through a sieve to remove zest, if desired.
Cover with plastic wrap and refrigerate until cold.
Add in whipping cream and freeze in ice cream maker according to manufacturer’s directions.
