Ingredients
2 lbs spinach leaves, fresh and torn into bite sized pieces
16 oz mandarin oranges, (2 cans) drained
1 lb chicken breasts, grilled or baked
1 cup feta cheese, or any other cheese of choice
¼ cup dry red wine
½ cup vegetable oil
¼ cup sugar
1 tsp salt
½ tsp pepper
1 tsp dry mustard
Preparation
In a bowl, toss the spinach, mandarin oranges, chicken breasts, and feta cheese together.
In a separate bowl, combine the red wine, vegetable oil, sugar, salt, pepper, and dry mustard until well-combined.
Drizzle the red wine dressing on the salad and toss once again.
