4 cups mandarin oranges, drained (reserve juice)
1 can pineapple with juice, (20 oz) crushed
1 can orange juice concentrate, (12 oz) thawed, frozen
¾ cup lemon juice
1 tsp dried orange peel
1 tsp ground ginger
1 tsp ground cardamom
4 cups granulated sugar , or Splenda
1 pack Lime Jell-O, (3 oz) regular or sugar-free
1 cup Clear-Jel A
1 cup mandarin orange juice
Drain mandarin oranges, reserve 1 cup juice.
Put in a large stockpot together with remaining ingredients.
Bring to a boil, turn down heat, and simmer for about 30 minutes.
In a bow, whisk Clear-Jel into 1 cup mandarin orange juice.
Stir into stockpot and bring back to a boil. Simmer for 5 to 8 minutes until thick.
Ladle into sterilized jars.
Wipe rims.
Cap and seal.
Process in a boiling water bath for 10 minutes.
