Ingredients

1 cup tortilla chips, crumbled

1 tbsp. vegetable oil

1/2 cup cheddar cheese, grated

1/2 cup salsa, jarred

8 eggs

Preparation

Heat oil in a sautée pan.

Cook salsa 30 seconds.

Add crumbled tortilla chips and continue cooking an additional 30 seconds.

Break eggs into a bowl and break yolks.

Add to salsa mixture and cook until set, 3-4 minutes.

Sprinkle with cheese and serve.
