4 cups Granny Smith apples, sliced
1 cup brown sugar
2 tbsp lemon juice
½ tsp ground cinnamon
2 tbsp unsalted butter, cubed and chilled
For Topping:
½ cup all purpose flour
½ cup quick oatmeal
3 tbsp brown sugar
1 tsp ground cinnamon
¼ cup cashews, peanuts, or pecans, roasted and chopped
¼ cup unsalted butter, cubed and chilled
To serve:
¼ cup ice cream, of your choice, preferably Vanilla-flavored
Combine apples, sugar, lemon juice, and cinnamon. Mix until evenly incorporated.
Put in a deep glass pie pan or 9-inch baking casserole. Then dot with the chilled butter.
For the topping, mix all ingredients but the butter. Working quickly, add the butter into the topping mixture and knead until the butter has been incorporated into the topping mixture. You may also use a pastry cutter for this.
Spread mixture on top of apples.
Microwave on medium for 12 to 15 minutes, turning twice throughout until the topping turns crisp.
Serve immediately alongside your favorite ice cream. The ice cream will act as its “sauce” while it melts.
