Ingredients
8 oz mozzarella cheese, cut into 1-inch cubes
⅔ cup glutinous rice flour, plus more for dusting
¼ cuo water, (up to ⅓ cup), hot
2½ tbsp cake flour, sifted
1 tbsp granulated sugar
1 tbsp unsalted butter, at room temperature
¼ tsp salt
⅛ tsp baking powder
5 cups vegetable oil, (up to 8 cups), for frying
¼ cup marinara sauce
Preparation
In a large mixing bowl, combine both flours, sugar, salt, and baking powder.
Pour ¼ cup hot water in the center then mix until it clumps together. You may need to add more hot water as needed.
Add your butter, then knead until a smooth dough is formed.
Set the dough aside for at least 30 minutes to rest at room temperature.
Once the dough has rested, portion into 1 oz balls.
Flatten your dough balls with your fingers, then place a mozzarella cube in your dough, then stick the dough together, eventually rolling back into a ball.
Repeat until you have used up your mozzarella cubes and dough. Set aside.
Preheat your oil ready for frying.
Deep fry your mozzarella balls in batches for roughly 5 to 7 minutes until golden brown and crispy.
Drain onto a plate lined with paper towels.
Serve immediately with marinara sauce on the side.
