3/4 cup Carolina rice
3/4 cup sugar
1 ½ qt whole milk
3/4 tsp salt
1 egg, add 1 more if desired
1/2 tsp vanilla extract
Nutmeg , to sprinkle on top
Add rice, sugar, milk and salt in a double boiler.
Cook uncovered for approximately 2 hours, after 15 minutes. Stir frequently so the rice doesn’t clump. Take off the stove.
Beat egg and fold in the mixture with the vanilla extract. Put in a large bowl and sprinkle with nutmeg.
Cover and refrigerate until cool and firm before serving.
