I like sausages – lots. They are good hot, cold, good to feed a crowd and are a handy pantry staple for feeding ravenous children. I like okra – lots. It is good in a salad, grilled with other vegetables, or in the stewed okra recipes we have in Sierra Leone. And I like okra even more as it leads me to meet Ozoz who blogs at Kitchen Butterfly through Instagram. I had been looking for okra pictures and recipes and I came across great African fusion recipes on her blog. I knew I had to get to know this person. And when she posted her okra and sausage sandwich recipe, I stopped everything and tried it there and then. The important thing is to make sure you choose the slightly smaller (tender) okra pieces and cut them into approximately the same size as the chipolata sausages. I have kept this very simple and served it in a sandwich along with mayonnaise and sweet chilli sauce but you can add sauces to your taste.
