The fewer the dishes the better and the more time you’ll have to spend doing the things you love like going for a walk, reading a book or taking a bath (or doing the things that must get done…clean, help kids with homework, make lunches for the next day….). Healthy fats, protein and veggies = complete meal!

I consider a complete meal one that contains plenty of healthy fats from the avocado oil, a quality source of protein and mostly veggies. One-pan Kielbasa Veggie Bake has everything you need. No need to add any extra sides unless you want to up your intake of veggies and serve it over a bed of lightly sautéed greens or cauliflower rice.

So much flavor in this dish thanks to the Kielbasa, a polish sausage that’s seasoned with garlic and other spices. My hubby doesn’t typically go for all the veggies but if it includes sausage (or bacon) there’s a good chance he’ll eat it and enjoy it. This recipe is a winner and one he even requests from time to time. Let me repeat that, this recipe is a winner and one he (who is quite picky) requests from time to time! Now if you aren’t able to get your hands on some Kielbasa, feel free to use any sausage of your choice. I just recommend one that’s made with quality and real food ingredients (suggested brands – Applegate, Aidells, Pedersons, Garrett Valley). If you have leftovers, I recommend you add them to an egg scramble or an omelet. So good!

Prefer a lower carb version? No problem!
