But holidays, oh, you can be stressful (and frantic). Especially when it comes to meals. If it were up to me, holiday meals would be methodically planned out to perfection. I would know exactly who wanted what and when and why and I would serve it all to them with a big smile on my face hours before they even thought to ask for it. A girl can dream, can’t she? I like to think I do a good job planning holiday meals, but I invariably get caught up in the stress of it and make a mistake. I burn something, forget something, or make a mess of something. (Or all three.)

So to make life easier during the holiday season, I try to be prepared with easy-prep meals that taste like I spent hours on them. I had the chance to do a ‘test run’ of one of these easy-prep holiday meals recently when some lovely friends dropped in during the afternoon. It was one of those ‘oh but we only plan to stay 30 mins’ things that turns into me saying ‘please stay for supper, we’d love to have you.’
