I will be getting some of my Easter sweet treats via these sumptuous Orange And Chocolate Chip Muffins. The rest of my treats will be via all the Easter egg hunts that granny and Freddy are going to be organising. Guess who is going to be in the middle of things with the biggest egg basket? These Orange And Chocolate Chip Muffins begin with some lovely chocolate, which is then cut through with both orange juice and orange zest and complete with loads of chocolate chips. And my secret ingredient which is almond flour, because we don’t do just plain old muffins around here. All the good things people, all the good things. They are great for breakfast or brunch, lunch boxes, tea parties, children play dates and more. Best news ever is they can be made ahead and frozen for when needed.
How To Make Chocolate Chip Muffins
Combine the dry ingredients together in a bowl. Combine the wet ingredients in another bowl. Add the wet ingredients into the dry ingredients and mix until barely combined. Note the batter will be thick and lumpy. Spoon the batter into the cases and bake.
You can easily bake this recipe as chocolate orange cupcakes for your kiddoes tea party and serve them along some children’s tea (roiboos in our case). I also have a plan to try this as a chocolate orange cake with some whipped cream frosting all topped with orange zest. One day people, one day.
Mini Chocolate Chip Muffins
To make these Mini Chocolate Chip Muffins, simply add the batter to the mini muffin cases and bake for about 10-14 mins.
