Ingredients

1 pkg yellow cake mix, prepared

6 oz orange jello

6 oz orange juice concentrate

30 oz mandarin oranges, (2 cans) drained

20 oz pineapple, (1 can) crushed

2 cups boiling water

3 oz instant lemon pudding, (1 large packet)

1 cup cool whip

½ cup coconut, shredded

Preparation

Prepare the cake mix according to package directions.

Once it has baked and cooled, use a skewer to poke holes on top of the cake.

In a bowl, dissolve jello packet in boiling water.

Stir in orange juice concentrate, crushed pineapples, and 1 can of the mandarin oranges. Mix until well combined.

Pour the orange mixture over the cake. Chill for at least 3 hours.

Prepare instant pudding according to packet directions and gently fold in the whipped cream.

Spread over the instant pudding mixture over the jello layer.

Top it off with coconut and remaining orange slices and let it chill for 30 minutes.
