Roasted cashew nuts are one of those really easy snacks that I just can’t stop making. Spicy roasted cashew nuts for boy’s night, honey roasted cashews for film nights and various other roasted nut combinations that I will no doubt share with you later on. I make so much of these that I regularly do a 6 hour round trip nut run to Brixton market. My last one was 2 weeks ago with 2.5 kg of cashews nuts, 1.5 kg of whole almonds and 750g of walnuts. And that is not counting the bag of shredded coconut, 6 plantains, okra, wonton wrappers and 12 limes. Let’s just say I am pretty good friends with some of the shop owners. Plus I get to eat rice and peas and curry from one of my favourite take away’s too. I miss you Brixton.

Now that I am all loaded up on nuts, I can just see that a significant part of my summer is going to involve roasted nuts, ice teas, vegan cheesecakes and nutty doughnuts. Bring it on.
