3 eggs, beaten
1/4 cup sugar
1/4 tsp salt
1 ½ cups evaporated milk , or cream
2 ½ cups peaches, canned, sliced
1/4 tsp nutmeg
1/4 tsp cinnamon
Almond extract, few drops
1 ½ cups rice, cooked
Beat eggs, sugar and salt well in a bowl. Add milk and syrup drained from peaches.
Cook in a double boiler until the mixture coats a spoon, stirring frequently. Remove from heat.
Add spices and almond extract. Combine with peaches and rice.
Chill and serve.
