Ingredients

1 ½ cup sweet potatoes, mashed

½ cup sugar

1 egg

½ tsp vanilla extract

¼ cup milk , or non-dairy creamer or soymilk

½ cup butter , or margarine (half a stick)

salt

½ cup brown sugar

3 tbsp butter , or margarine, melted

3 tbsp flour

½ cup pecans, chopped

1 ½ cup graham cracker crumbs

½ cup butter , or margarine, melted

Preparation

Preheat the oven to 35 degrees F.

In a bowl, mix the melted butter and graham cracker crumbs.

Press the mixture into a pie pan or round baking dish.

Combine the mashed sweet potatoes, sugar, egg, vanilla extract, milk, butter, and salt.

Pour the mixture into the crust.

In a separate bowl, mix the brown sugar, butter, flour, and pecans together until crumbly.

Sprinkle it on top of the pie.

Bake 35 to 40 minutes uncovered.
