We love the challenge of “real food-ifying” and creating healthy recipes that remind us of some of the foods that we love – whether they’re from our childhood or in the present. Cool Ranch Doritos are a snack food that comes to mind and were once something I enjoyed on the regular when I was…well, oblivious to the correlation food had on one’s health. At the time, they were in the running for being my favorite snack food of all time – up against Ruffles Cheddar and Sour Cream Chips, Ritz Bits Sandwich Crackers, Easy Cheese, Strawberry Pop Tarts, Peanut Butter M&M’s and Honey Nut Chex Mix. The crunchiness of Cool Ranch Doritos and how every chip is perfectly speckled with seasoning is something I had to replicate, but of course in a healthier, real food way using clean ingredients and better non-inflammatory oils. So allow me to introduce to you ‘cool’ Ranch Roasted Mixed Nuts. A recipe inspired by Doritos.

Ranch Roasted Nuts are made with good-fat-filled Thrive Culinary Algae Oil.

Thrive Culinary Algae Oil is the newest oil to hit the at-home culinary scene and one we’re loving for sautéing, baking, roasted, drizzling on salads and marinating. What’s great about this oil is that it’s light, neutral taste lets the other flavors shine through your food, which is of course crucial in this recipe when you want cool ranch seasoning in the spotlight. And thanks to the high smoke point (up to 485 degrees), it’s safe to use over high heat. The high smoke point comes from its high levels of heat-stable, heart-healthy monounsaturated fatty acids (MUFA’s). So you can feel good about using Thrive as an everyday cooking oil. We were a bit skeptical about an oil made from algae at first, but one try and we were pretty smitten with how versatile it is.
