Ingredient Notes
Raspberries – This uses fresh raspberries. Feel free to use bruise raspberries as these will be discarded. Save the best ones for eating or garnishing. Sugar – plain white sugar is great.Lemon juice – use juice from freshly squeezed lemons. I love using Meyer lemons when possible as these are sweeter compared to regular lemons.Water – Plain tap water. Apple JuiceIce and lemon slices – for cooling and an easy garnish.

First, make the syrup by combining the sugar with the water in a saucepan and put on medium heat till the sugar is dissolved. Swirl the pan occasionally to speed up the process.Allow the syrup to cool.Sieve the pureed raspberries, reserving the juice and discarding the pulp.Then in a large jug, combine the lemon juice, raspberries and the syrup.Mix in 5-6 cups water and apple juice depending on how sweet / tart you prefer your lemonade.Garnish the Raspberry Lemonade with lemon slices, raspberries and serve with ice.

Place all ingredients into the Instant Pot. Do not mash the raspberries.Close the lid and turn the vent to the sealing position. Set the Instant Pot to Pressure Cook or manual at high pressure for 5 minutes. Let cook till done then, allow a natural pressure release for 10 minutes and then manual release the rest of the pressure and open the Instant PotScoop out the raspberries, they will have turned white at this point and will still be intact.Decant into a large pitcher, let cool and refrigerate.When ready to serve, pour over ice and garnish with lemons and fresh raspberries.
Note – cook time does not include the time it takes for the Instant Pot to come to pressure or to release pressure.
Homemade Lemonade Tips
For the best results use freshly squeezed lemon juice not the bottled juice.Make sure your lemons are ripe and give a little when squeezed so you get the maximum lemon juice from each lemon. Add even more raspberries if you prefer.Make with a sparkling lemonade for a fun twist.
