I just HAD to post this Raspberry Mojito recipe before I go away. Yes peeps I am going away so short post alert. A friend of mine has very kindly (and to my utter astonishment) agreed to take BOTH my kids for a day and half. Yes peeps, a whole day and half. This translates to – find the nearest nicest hotel I can afford with swimming pool and everything, book a night away with a three-course dinner, breakfast and cream tea on arrival. Then quickly whip this Raspberry Mojito and photograph it in 10 mins, write this post, press publish, pack a bag in exactly 5 mins, get into the car and drive away with the windows down and grown-up music blasting away. Yes, we will be one of those people and we will enjoy every moment. Because the opportunity for both of us to be kids free – is very, very, very rare.

How To Make Raspberry Mojito
Step 1. Combine the mint, raspberries, lime juice and sugar syrup in a glass and crush the mint leaves as you mix. Step 2. Then stir in the rum. Step 3. Top with some ice and soda water, garnish and serve. Simple is as simple says and these Mojitos are that easy to make.
