1 tbsp garlic, minced
2 carrots, sliced or diced
2 green bell peppers
½ onion
3 green onions

salt and pepper , to taste
1 tsp Tony Chachere’s Creole Seasoning
water
Throw all ingredients in the crockpot or pressure cooker.
Add water until it covers the roast.
Cook down until tender, adding water as necessary.
Serve over rice or mashed potatoes.
Change, add or adjust seasonings to taste.
Store leftovers in fridge for up to one week.
