1 lb salmon fillet, slice into 2-inch thick fillets

⅓ cup milk

5 bay leaves, torn

5 oz red onion, cut into chunks

1 tbsp Italian seasoning

2 tbsp dried dill

salt and ground black pepper, to taste

To serve:

⅓ cup tartar sauce

1 lemon wedge, per serving

Preheat the oven to 325 degrees F.

Combine the Italian seasoning and dried dill.

Season an un-oiled baking dish with the dried herb mixture.

Season the salmon with salt and pepper. Place the salmon in the seasoned un-oiled baking dish.

Pour in milk enough to cover ¼ inch of the salmon

Cover the fillets with bay leaves and onions. Season with the remaining herb mixture.

Bake the salmon in the oven for 30 to 45 minutes until it becomes tender. Make sure to baste from time to time.

Serve with lemon wedges, tartar sauce, and mixed vegetables.
