How to Make Brookies
Just look at those lovely bars loaded with dark chocolate, butterscotch, white chocolate, crunchy pretzel bits and sprinkled lightly with sea salt. Am I conveying exactly how mouth-watering these salted butterscotch pretzel brookies are? So good that I had to send them to the office with my husband and remove them from our house. There are a few steps to this recipe but I promise it’s worth the effort. Preheat the oven to 350 degrees. Line a 13×9 baking dish with a parchment paper handle, spray with baking spray. For the brownie layer: Combine the sugar, all-purpose flour, cocoa powder, eggs, melted butter, vanilla, and salt with a wooden spoon. Spread evenly in the bottom of the prepared baking dish. For the cookie layer: In a large bowl cream butter and sugar together with a mixer until well combined. Beat in the egg and vanilla. In a medium bowl whisk the flour, salt, and baking powder. Add to wet ingredients until thoroughly combined. Gently mix in the white chocolate, butterscotch chips, and pretzels. Then place the cookie dough between two sheets of parchment paper and roll it out to fit the pan. Place the cookie dough gently over the brownie batter, sprinkle sea salt over the top and bake. Bake 30-35 minutes. Cool completely, before slicing these brookie bars. Soft and chewy butterscotch cookie on top of a dark fudgy brownie! I dare you to eat just one.
