1 tbsp butter

1 shallot, minced

1 salmon fillet , 12 oz (or two 6 oz fillets)

salt

pepper

1/4 cup Irish whiskey

1 tsp apple cider vinegar

1 tbsp fresh tarragon, minced

1/4 cup whipping cream

lime wedges

Melt the butter in a medium-sized skillet. Add in shallot and sauté for 2 to 3 minutes.

Season the salmon with salt and pepper for flavor. Then sauté the salmon for 3 to 4 minutes per side.

Remove the salmon and plate (the salmon won’t be completely cooked yet at this point). Add the whiskey, vinegar, and tarragon to the skillet and simmer for 1 minute.

Add in the whipping cream and season the salmon with salt and pepper. Return the salmon to the skillet and cover and cook for 1 to 2 minutes per side. Then divide the salmon in half.

After dividing the salmon, arrange each half on 2 plates. Afterward, top them with sauce and serve them with lime wedges on the side. Enjoy!
