Ingredients
1 red onion, peeled and quartered
1 red pepper, seeded and sliced
2 zucchinis, sliced
1 yellow summer squash, sliced
2 tbsp olive oil
2 tbsp balsamic vinegar
6 garlic cloves, minced
1 tsp sea salt
½ tsp black pepper
Preparation
Mix all ingredients in a bowl.
Preheat pellet grill to 350 degrees F.
Close pellet grill lid and cook at 350 degrees F for about 30 to 45 minutes or until vegetables are carmalized and cooked through.
