6 large sweet potatoes
2 sticks butter
2 cups granulated sugar
1 tbsp cinnamon
1 tbsp nutmeg, ground
1 tbsp pure vanilla extract
salt, to taste
Peel the sweet potatoes and cut them into cubes.
Melt the butter in a heavy skillet and add the sweet potatoes.
Mix the sugar, cinnamon, nutmeg, and salt.
Cover the sweet potatoes with the sugar mixture and stir.
Cover, reduce heat to low and cook for about an hour or until the potatoes are soft and “candied”. Stir occasionally during cooking. They should be tender and a little hard around the edges.
Just before serving, add the vanilla and stir.
Serve hot and enjoy!
