Ingredients
½ lb. ground beef
¾ cup corn tortilla chips, crushed baked,
1 large egg
15 ¼ oz. whole-kernel corn, drained
11 oz. salsa
Preparation
Preheat oven to 375°F.
In a large bowl, mix ground beef with tortilla chips, egg, corn, salsa, salt, and black pepper just until well-combined.
Transfer meat mixture to a 14x10-inches roasting pan. Shape the meat into a 10x5-inch loaf.
Spread the remaining salsa on top of the loaf.
Bake the meatloaf for about an hour or until the temperature reaches 160°C.
Let meatloaf stand for 10 minutes for easier slicing.
