Ingredients
1 lb ground beef
½ cup onion, chopped
1 can diced tomatoes, (14 oz)
4 large red bell peppers, or yellow bell peppers, seeded, stems removed and cut in halves
2 tbsp Worcestershire sauce
½ cup rice, uncooked
¾ cup water
½ tsp salt
¼ tsp pepper
1 cup cheddar cheese, shredded
Preparation
Brown ground beef and onion in a skillet; drain.
Place the pepper halves in a 2-quart casserole dish.
Mix all other ingredients in a bowl.
Scoop a portion of each into the pepper halves.
Cover and bake at 350 degrees F for 1 hour or until rice is tender.
Uncover and sprinkle with cheese.
Return to oven until cheese melts, about 5 minutes.
