Ingredients
3 cups cantaloupe, or honeydew melon, sliced
1 cup strawberry puree
1 cup strawberries, sliced
½ cup plain fat-free yogurt
2 cups orange juice
2 tbsp tapioca starch
¼ cup lemon juice
2 tsp ginger, minced, or ½ tsp ground ginger
¼ cup sugar
low-fat sour cream
mint sprigs
Preparation
In a saucepot, combine orange juice, strawberry puree, sugar, ginger, and tapioca starch. Mix well then heat up to a boil until slightly thickened.
Take it off from the heat. Add in the lemon juice and yogurt.
Pour it into a big bowl. Add the cantaloupe, strawberries, and the other sinkers (optional). Cover it using plastic wrap and chill for at least an hour.
If desired, you can garnish it with low-fat sour cream and mint sprig. Serve and enjoy!
