Ingredients

36 oz sweet potaotes, soft, cooked

½ tsp nutmeg

¼ tsp allspice

¼ tsp salt, optional

2 tbsp butter, melted

1 tbsp sherry, optional

2 tbsp butter

1 medium onion, sliced or minced

6 oz mushrooms, or 2 cans, drained, sliced

½ cup olives, optional, quartered large stuffed

1 can Cream of Mushroom , or Celery soup, undiluted

dash pepper

2 cup chicken, cubed

Preparation

Mash soft sweet potatoes while adding spices with melted butter and sherry.

Line a 9 inch pie plate and pour in the mixture. Building up the edges.

Sauté minced onion in skillet with butter until tender.

Add mushrooms with their liquid and the remaining ingredients, stirring occasionally.

Pour mixture into sweet potato pie crust.

Bake 30 minutes in 350 degrees F oven.
