Ingredients

1 cup tomatoes, peeled, diced

⅓ cup fresh parsley

¼ cup yellow bell pepper, chopped

2 tbsp Greek olives, pitted

2 tbsp fresh lime juice

1½ tbsp capers, drained

1½ tbsp olive oil

1½ tsp fresh basil, chopped

1 tsp balsamic vinegar

dash cayenne pepper

dash black pepper

Preparation

Mix ingredients.

Put in refrigerator and cover for 1 hour to enhance flavor.
