1 ½ cups flour
2 tsp baking powder
¼ cup soft shortening
¾ cup sugar
½ cup milk
1 egg
½ tsp salt
Cinnamon Topping:
½ cup brown sugar
1 ½ tsp cinnamon
Heat oven to 375 degrees F.
Grease and flour a 9 by 9-inch square pan.
Mix sugar, shortening and egg.
Stir in milk.
Measure flour; blend dry ingredients and stir in.
Spread batter in pan.
Sprinkle with cinnamon topping.
To make cinnamon topping, mix ingredients and sprinkle over coffee cake before baking.
Bake for 25 to 35 minutes, or until done.
Serve warm.
