How To Make Teff Porridge

Add the teff grains to a saucepan, then stir in the milk, water, spices, salt, and bring to a boil.Reduce to a simmer and cook for about 15 – 18 minutes, until the liquid is absorbed and grains are tender. Stir in the coconut sugar or maple syrup (if using). When done to your liking, portion it out and serve with the toppings of your choice.

Expert Tips

Make sure to use whole grain teff (not teff flour) for this recipe.Do remember to stir the porridge occasionally while cooking to prevent sticking/burning. Feel free to add a little more liquid if it starts to get too thick.

Pro Tip: For extra flavor, toast the teff grains in the saucepan for 3-5 minutes over medium heat before adding the rest of the ingredients.

Delicious Variations

While this cozy porridge is pretty darn perfect as is, it’s also easily customizable. Here are a few tasty ideas to try;

Use different milk: use coconut milk, soy milk, oat milk, or regular milk (if not vegan).Mix-in flavorings: add vanilla extract or brewed coffee; stir in some pumpkin purée or peanut butter.Top it off: serve with sliced fruit, fresh berries, raisins, chopped nuts, or shredded coconut.

Meal Prep and Prep Ahead

You can make this porridge ahead of time and store in the fridge until needed.

Prep Ahead – Whip up a batch of this porridge ahead of time and store to use throughout the week.Store – Keep in an airtight container inside the fridge for up to 5 days.Freeze – I don’t recommend freezing this, as it tends to get mushy when defrosted.Reheat – Add a bit of liquid to the porridge and reheat on the stovetop.

FAQs

How Do You Cook Teff?

Cook teff just as you would rice, quinoa, and other grains. Add 3 cups of water to a saucepan and bring to a boil, then stir in 1 cup of teff. Reduce to a simmer, cover, and cook for 20 minutes, until the water is absorbed. Remove from heat, and fluff with a fork before serving.

What Does Teff Taste Like?

Whole-grain teff has a mild, nutty flavor that complements a wide variety of foods.

Does Teff Need to Be Soaked or Rinsed?

While you do not need to rinse or soak teff before cooking, some people like to soak it overnight in order to break down the phytic acid so the nutrients can be more easily absorbed.
