Ingredients
2 tsp olive oil
8 potatoes, sliced crosswise ¾ way through
6 cloves garlic, minced
1 tsp oregano
1 tsp dried basil
salt and pepper , to taste
1 stick butter, melted
¼ cup Parmesan cheese, shredded
Preparation
Preheat oven to 375 degrees.
Coat bottom of a cast iron skillet with oil and place in sliced potatoes.
In a bowl, whisk together melted butter, garlic, oregano, basil, salt, and pepper.
Pour evenly over potatoes.
Cover with foil and bake for one hour, remove foil, sprinkle with cheese, and bake for an additional 15 minutes.
