2 tbsp olive oil

4 cloves fresh garlic

4 fresh basil leaves

pinch black pepper

1 kg whole Italian style tomatoes , crushed by hand

small onion, chopped

pinch oregano , for pizza or seafood

Saute chopped or minced garlic in olive oil until translucent then add whole tomatoes and black pepper.

Bring to a boil on medium-high heat.

Reduce heat add basil, cover, and simmer for 45 minutes to an hour stirring regularly.

Remove from heat and let stand for five to ten minutes.

Reheat sauce when serving if necessary.

Important: when using oregano for pizza sauce or seafood recipes, be sure not to add oregano until the last few minutes or oregano will become bitter.

If using onions, saute with garlic at the beginning.
