Ingredients

1 ½ cup water

1 cup celery, chopped

1 cup green pepper, chopped

1 cup onion, chopped

1 lb chorizo, cut into small chunks

1 tbsp Cajun seasoning

1 tsp vegetable oil

14 ½ oz tomatoes, undrained, stewed

2 cups turkey, chopped, cooked

3 cups Minute White Rice, uncooked

Preparation

In a large skillet, cook and stir celery, green pepper, onion, and chorizo in hot oil over medium-high heat for 5 minutes or until chorizo is cooked through.

Add tomatoes with their liquid, the water, turkey and seasoning; mix well.

Bring to boil.

Stir in rice.

Reduce heat to low; cover.

Simmer for 5 minutes.

Remove from heat.

Let stand, covered, 5 minutes.

Mix lightly before serving.
