Ingredients

2 qt. turkey broth , or chicken broth

½ cup lentils, any variety, washed and sorted

½ cup orzo

1 cup leeks, chopped

1 cup celery, chopped

3 cup turkey, cooked and diced

½ tsp. dried oregano leaves, crushed

1 clove garlic, minced

½ tsp. season salt

Preparation

Place all ingredients in a 4-qt. saucepan and heat to boiling, then turn down to medium heat and simmer for 30 minutes or until vegetables are tender.

Add salt and pepper if needed.

Serve with seasoned croutons or crackers.
