I was so excited about preparing these drinks over the weekend that I forgot to take any of the prep photos.  Not to worry, I’m sure you will figure it out. You can make one drink in less than 5 minutes and be by the pool relaxing in no time. The fresh mint makes this drink sing! I don’t know about you guys but the temps here have been unbearable! Oh, and the humidity…ridiculous!

Recipe Ingredients

A classic mojito contains rum, lime, fresh mint, sugar, and soda water.

Rum – Mojitos are best with white rum.Fresh lime juiceFresh mintClub sodaFresh watermelon – This will add sweetness without adding sugar or simple syrup.

Tips

If the watermelon is not very sweet you can add some simple syrup or agave nectar. Simple syrup is just equal parts water and sugar. Over low heat stir until the sugar is dissolved. There is no need to bring it to a boil, the sugar will dissolve with just low heat.If you like a thinner consistency push the puree through a fine mesh sieve to achieve a juice consistency.Use seedless watermelon to make things easy.

How to Make a Watermelon Mojito

Use a blender (or food processor) to process the watermelon until liquefied. We used my new Target clearance find.  I found a smoothie blender for $11! It came with those cute plastic mason jars. Yes, clearance finds THRILL me. Don’t you love a good clearance sale? Muddle the mint leaves and freshly squeezed lime juice, pour over the watermelon puree, and add ice, white rum, and club soda. Stir to combine. Serve in a highball glass, or embrace the south and use a mason jar. Garnish with a watermelon wedge. Sit back, relax and enjoy! Who doesn’t love watermelon?
